Hatcher Family Dairy Whole Milk is pasteurized, but not homogenized. That means, that the cream, rather than being mixed into the milk, will be sitting on top of the jug when you get it home. Some folks scoop this off and enjoy the full cream flavor in their coffee or tea, while others just shake up the jug, mix it in and drink it.
For those of us who grew up in the colder climates where the milkman still came to the house every day, we can remember going to the door on a cold winter morning to see the milk bottle with a little stack of frozen cream coming out the top and with the cardboard lid sitting on top like a hat. That too, was milk that was not homogenized.
